Families! As much fun and memorable as they are, they make life a learning process. In my case, it was my son. He was allergic to dairy. Me? I had to learn to cook with milk substitutes. Quite the adventure.
Then along came my daughter-in-law. Bless her heart, she's allergic to gluten (That's the ingredient you find in wheat and other grains that is responsible for dough elasticity.). Another learning process! How do you make a cake without flour?
Needless to say, I figured it all out. Not only do I make my baked goods the "normal" way, but I can make them gluten free, diary free, and vegetarian and vegan friendly. I have 30+ years experience in baking and decorating.
Allergies? Nuts? Bananas? Strawberries? No problem. We have a special room used only for baking our allergy-free recipes to avoid cross-contamination. Only one cake is made at a time in this room, and it is scrubbed and sanitized in between. The cakes are stored in that room separate from all other locations to insure they stay allergen-free.
